You might be wondering what Caribbean Salsa has to do with Appalachia, and I would too. So here’s the story: One hot summer day, we decided to rent one of those fancy log cabins (you know… new, pretty, really good A/C). It was a hot August day so we decided just to stay in and watch movies. The only DVD available in the whole cabin was a Pirates of the Caribbean box set. Of course, we had our chips and salsa, the favorite trail snacks. After being inspired by the islands, and maybe the soundtrack, we headed to the kitchen to add a little flair to our stock salsa. Presto! The Jolly Man Caribbean Salsa was born.
Tomatoes (Tomatoes, Tomato Juice, Calcium Chloride, Citric Acid), Onions, Tomato Paste (Tomatoes), Jalapeno Peppers, Tabasco Peppers, Cucumber, Key Lime Juice (Water, Key Lime Juice Concentrate), Peter Peppers, Apple Cider Vinegar, Salt, Cilantro, Garlic Powder, Smoke Flavor (Maltodextrin, Natural Smoke Flavoring), Marjoram.
Chips and Dip of course… perhaps with a side of some tropical fruit.
Make some homeade Jerk seasoning and toss in half a cup of Caribbean Salsa. Marinate Chicken or pork chops
Add a spoonful to mac and cheese to give it a sweet and spicy favor.
